Karen spoke to us about Four Brix Winery.
 
Karen Stewart then took us on a tour of Four Brix Winery and gave us the history of the winery. Four Brix is basically a hobby gone really bad, or in the case of Four Brix really good.

Four Brix was started by three families, Rotarians, who wanted to take their garage wine making to the next level. They opened their Ventura winery last September after producing their wines at a co-op in Paso Robles the last few years.

The name Four Brix comes from their “Four” favorite wine producing regions in the world and “Brix” the measurement of sugar used to calculate what the final alcohol content will finish at after fermentation. The wines made by Four Brix are made to remind you of Italian, French, Spanish and California wines.

Karen also went through the production cycle from bringing the grapes down to Ventura to the crush, fermentation, press and barreling. Karen also explained how they bottle their wines. There is a mobile bottling company catering specifically to the small wine makers that comes in and does the whole bottling process for you. All you need to do is load the bottles to start the process and take them off after they are filled, corked and foiled. An amazing process!
